Kid-Approved Low Carb Ice Cream Sandwich Recipe

This past Sunday Emma turned 2. I can’t believe how fast she is growing up, it feels like only yesterday we met her for the very first time. But now she is a very opinionated 2 year old who loves Disney, Pixar, Fish, and Bruce Springsteen! Her favorite food is our Low Carb Ice Cream Sandwich.

To celebrate we had a weekend full of all Emma’s favorite things! She got to visit with Friends and family, go to the aquarium, visit the zoo, Watch Luca, dance to Bruce, and blow out her candles and enjoy a yummy low carb Ice cream sandwich!

Thanks to Real Good Foods Emma was able to enjoy a very special birthday treat! A Low Carb Ice Cream Sandwich, and she enjoyed every last bite!

Below is exactly how to make the yummy low carb treat!

Low Carb Ice Cream Sandwich

Ingredients:

Real Good Ice Cream (flavor of your choice)

1/2 cup of almond butter or peanut butter

1 TBSP of unsweetened Almond Milk

2/3 cup of Almond Flour

3 tbsp monkfruit sweetener

1/8 tsp of salt

1/8 tsp of baking powder

Directions:

First make the cookies:

Heat over to 325

Mix: 2/3 cup of Almond Flour, 3 tbsp monkfruit sweetener, 1/8 tsp of salt, 1/8 tsp of baking powder

Add in: 1/2 cup of almond butter or peanut butter, 1 TBSP of unsweetened Almond Milk

Place in cookie sheet 2 inches apart and bake for 10 minutes

Let cookies cool completely- put in fridge to speed up process

Next add two scoops of Real Good Foods Ice Cream in between two cookies to make the sandwich!

Freeze until ready to eat!
